Unity is only mixing to stereo atm. However, surround (5.1, 7.1 etc.) support is on the roadmap.

I don't think so. There's no mention of it anywhere in the docs.

For what it's worth, there's a feature request for Surround Sound filed in Unity's "User Voice" Feedback system, here:

You could add your vote to it.

I've never bothered to test, but that's kind of a bummer. I figured that the 3D sound would be positioned based on how many output channels you were using.

Fortunately, the Xbox 360 requires games to be in 5.1, and Unity has been announced for the 360, so it's obviously coming.
